Winner, Winner, Chicken Dinner!

Hello all!  So sorry that it’s been so long since my last post.  I recently moved from Las Vegas to Pennsylvania, so it’s been a bit crazy!  I’m finally getting settled in, and wanted to share this recipe to help get me back in the blog game!

 

This is a delicious way to make a chicken breast dinner more interesting! My good friend made a version of this for a girls’ night at her house, my fiance and I have made it for dinner many times, and I’ve even made it for my parents! It does take a little preparation, but it’s totally worth it!
  • Prep time: 25 minutes
  • Cook time: 30 minutes
  • Total time: 55 minutes
  • Servings: 2 +
  • 2 Boneless, skinless chicken breasts
  • 1/4 cup(s) of breadcrumbs
  • 2 slices of provolone cheese
  • 8 – 12 stalks of asparagus
  • 2 pinches of salt
  • 2 pinches of pepper
  • 2 pinches of season salt
  • 2 tsp. of vegetable oil
Steps
  1. Trim the fat from the chicken breasts if there is any (I don’t know about you, but I hate getting a nasty bite of fat!)
  2. Layer each chicken breast between cling wrap or inside a zip top bag. Pound the chicken until it is flat, about 1/8 in to 1/4 in thick. Try to make it as even as possible.
  3. lay out a chicken breast on a flat surface (plate, cutting board, etc). Brush the chicken with vegetable oil and sprinkle with salt, pepper, and season salt.
  4. Place a slice of the provolone in the middle of the chicken breast
  5. put 4-6 stalks of clean asparagus on top of the provolone
  6. roll the chicken breast so that it surrounds the cheese and asparagus and place it “seam” down on a cookie sheet sprayed with cooking spray
  7. Brush more vegetable oil on the top of the rolled chicken breast and sprinkle a bit more seasoning. Cover the top of the rolled chicken breast with breadcrumbs
  8. Repeat these steps for the second chicken breast (and any others depending on how many servings you’d like to make)
  9. Cook in a preheated oven at 400 degrees for a half an hour. At that point, check the chicken to see if it is thoroughly cooked. If not, put it back in for an appropriate amount of time. If so, serve and enjoy!
